<p>Ingredienti per 6 persone</p>
<p>GR 400 di scamone di manzo pulito<br />
N° 2 carciofi freschi ben chiusi<br />
GR 100 di funghi freschi champignon<br />
GR 120 di insalatina miste pulita<br />
GR 90 salsa citronette<br />
GR 60 di scaglie di grana o parmigiano<br />
GR 10 di prezzemolo tritato</p>
<p><u>Procedimento</u></p>
<ol>
<li>Sgrassare lo carne, avvolgerla in una pellicola e riporla in congelatore per almeno un&#8217;ora</li>
<li>Tagliare a piccoli pezzi l&#8217;insalata.</li>
<li>Pulire i carciofi dalle parti esterne coriacee e dai pelucchi interni fastidiosi.</li>
<li>Affettare sottilmente i carciofi uno alla volta e conservarli dalla ossidazione irrorandoli con succo di limone sale e pepe e mantenendoli poi completamente coperti di olio.</li>
<li>Pulire, lavare e affettare sottilmente i funghi.</li>
<li>Passare quindi alla composizione del piatto ponendo prima l&#8217; insalatina sul piatto nella parte centrale appoggiarvi sopra lo carne contornare con le lamelle di fungo e carciofo.</li>
<li>Salare, coprire con scaglie di grana e spolverizzare di prezzemolo tritato prima di inviare a tavola.</li>
<li>Guarnire a piacere con fette di limone, pomodori o altro a piacere.</li>

<p>(Per 4 persone)</p>
<p>Ingredienti:</p>
<p>Carote tenere gr. 700,<br />
1 cipolla bianca,<br />
pinoli gr. 30,<br />
uvetta gr. 30,<br />
burro gr. 20,<br />
olio d&#8217;oliva,<br />
1/4 di dado,<br />
aglio,<br />
cannella in polvere,<br />
noce moscata,<br />
sale.</p>
<p>Procedimento:<br />
Pulire e tagliare le carote a bastoncini, tuffar1i in acqua in ebollizione e cuocerle per 15 minuti circa.<br />
Affettare a velo la cipolla e tritare finemente uno spicchio d&#8217;aglio.<br />
Porre questo trito in un tegame con il burro e tre cucchiai d&#8217;olio e farli appassire dolcemente.<br />
Scolare le carote, tenendo da parte un bicchiere dell&#8217;acqua di cottura ed unirle al soffritto.<br />
Mescolare e lasciare insaporire per 3-4 minuti.<br />
Intanto lavare l&#8217;uvetta, sgocciolarla e unirla alle carote insieme ai pinoli.<br />
Irrorare con l&#8217;acqua tenuta da parte, insaporire con il pezzetto di dado sbriciolato, la noce moscata ed un                     pizzicone di cannella.<br />
Lasciare sobbollire a fuoco moderato, coperto sino a quando il liquido sara&#8217; stato assorbito dalla verdura.</p>

<p><em>Bucatini gr 800<br />
</em><em>Salsa di pomodoro a pezzi gr 400<br />
Guanciale stagionato gr 200<br />
Cipolla n° 2<br />
</em><em>Aglio a spicchi<br />
Pecorino grattugiato gr 100<br />
Sale, pepe, peperoncino q.b </em></p>
<p>PROCEDIl\1ENTO</p>
<ol>
<li>Pulire la cipolla e affettarla, schiacciare lo spicchio d&#8217;aglio, togliere la cotenna al guanciale e tagliarlo a listarelle;</li>
<li>fare imbiondire il guanciale e a metà cottura unire la cipolla e l&#8217;aglio condire con sale, lasciare cuocere dolcemente;</li>
<li>cuocere la pasta al dente in acqua bollente salata;</li>
<li>aggiungere al guanciale il pepe, il peperoncino e la salsa di pomodoro a pezzi e lasciare cuocere 5 minuti;</li>
<li>scolare la pasta e condirla in padella con la salsa e il pecorino grattugiato. servire subito.</li>
</ol>
<p>Procedere esattamente fino al punto 4, poi aggiungere al guanciale il pepe e il peperoncino e, al posto del salsa di pomodoro, un mestolino di acqua di cottura. Si tratta della versione più antica del piatto, denominata: Bucatini (alla gricia)</p>
<p>Amatrice, città un tempo abruzzese e oggi laziale, dà il nome a questo famosissimo piatto, la cui caratteristica è la preparazione espressa del condimento, fatta direttamente in padella.</p>

<p>Per crema (l kg circa)<br />
8 tuorli<br />
300 g di zucchero<br />
1 lt. di latte<br />
1 cucchiaino maizena<br />
vaniglia, chicchi caffè, cannella, scorza limone, chiodi di garofano</p>
<p>1,100 kg panna semi montata<br />
500g cioccolato (fondente,bianco,allatte) fuso.<br />
colla di pesce ( 20g per fondente, 25g per latte, 30g per bianco)</p>
<p>PROCEDIMENTO:</p>
<p>Portare il latte con gli aromi a ebollizione, nel frattempo sbattere vigorosamente i tuorli con lo zucchero, stemperare questo composto con una mestolata di latte bollente, versare poi il resto del latte, aggiungere la maizena e riportare sul fuoco, per fare raggiungere 82°c.<br />
Sciogliere la colla di pesce al microonde e aggiungerla a una parte della crema ancora calda, poi aggiungere il resto della crema.<br />
Semi-montare la panna e aggiungerla un poco alla volta alla crema.<br />
Quando il composto apparirà omogeneo, porlo in uno stampo e metterlo in congelatore per 1 giorno circa.</p>
