<p>Per crema (l kg circa)<br />
8 tuorli<br />
300 g di zucchero<br />
1 lt. di latte<br />
1 cucchiaino maizena<br />
vaniglia, chicchi caffè, cannella, scorza limone, chiodi di garofano</p>
<p>1,100 kg panna semi montata<br />
500g cioccolato (fondente,bianco,allatte) fuso.<br />
colla di pesce ( 20g per fondente, 25g per latte, 30g per bianco)</p>
<p>PROCEDIMENTO:</p>
<p>Portare il latte con gli aromi a ebollizione, nel frattempo sbattere vigorosamente i tuorli con lo zucchero, stemperare questo composto con una mestolata di latte bollente, versare poi il resto del latte, aggiungere la maizena e riportare sul fuoco, per fare raggiungere 82°c.<br />
Sciogliere la colla di pesce al microonde e aggiungerla a una parte della crema ancora calda, poi aggiungere il resto della crema.<br />
Semi-montare la panna e aggiungerla un poco alla volta alla crema.<br />
Quando il composto apparirà omogeneo, porlo in uno stampo e metterlo in congelatore per 1 giorno circa.</p>
